Played the Legends Walk at Orange Lake about three years ago. My typical vacation group does not golf so while they went to the water park, I played the Legends Course. On the way back, all the kids and other fathers decided they would play the Legends Walk with me that evening. Last group out so we had no pressure other than the lights may go off at any time. 2 of 3 had never golfed but we had a great time. REALLY dark between some of the holes which was part of the allure to some of the kids. We ended up playing a shamble since half the drives strayed out of the illuminated areas, but it was a blast. Have also played Angel Park and it is a great course.

There used to be an illuminated Par-3 course on Leetsdale Drive in Denver (maybe Glendale) that was pretty fun too. Cannot remember the name and no idea what happened to it but it is long gone.

I would have swore there was a course in Gainesville, FL that had lights, at least it did in the late 1980s.

How is the technology coming for lighted golf balls. Would this be a less expensive option in conjunction with just having the greens lighted?

In Missouri, there is a small, privately-owned par 3 course called Pallo's Par 3. It isn't surprising you missed it, because it is pretty much in the middle of nowhere (outside a small town called Bonne Terre, MO). The owners have done a tremendous job over the years transforming this cow pasture into a very nice, fully lit, par 3 course open until midnight. I am, admittedly, new to golf, but I enjoy playing this course at night, especially in the summer, to stay out of the 100 degree daytime heat combined with the very high Missouri humidity. This course can easily be walked, but they also offer 2 and 4 person carts and often offer specials, like a couples night that includes 9 holes, a cart and a bottle of wine for $30.

Twin Pines Golf Course in Cedar Rapids, IA is a regulation, par 72 course that has the entire back nine lighted during the spring, summer and part of the fall. Not too hard of a course, but fun on a summer evening. Just remember to bring your Deep Woods Off

You missed the Royal Golf Club in Bahrain. Full championship course designed by Colin Montgomerie--and both the back nine and the 9-hole par-3 course are entirely lit.
