You rightly mention Pasatiempo as a whole, but #16 has to be called out individually. When standing at the bottom of that 3-tiered green, you can't see the top. #18 there is also particularly vicious.

The sandscrapes at Elmore GG in Victoria, Australia are outrageous for speed, small footprints and reads.

Broadmoor east course, hole #8 or #9.

Couldn't agree more about Yale. If an architect built a course like Yale today, the members would tell him to blow it up and start over. Which would be a shame, because it is one of the most unique and fun golf courses you could ever hope to play!

I think consideration has to given to adding the Hill Course at French Lick, IN. There are NO flat surfaces there.

Maggie Valley Golf Course near Asheville, NC. I haven't been there in a few years, so I don't know if the greens are still this way. Almost all of the holes have severe slopes and when they cut them low, I've seen 20-30' putts go up to the hole and then come back to the player and sometimes even off the green. They're practically unfair at times.

Seminole. Even the holes not on the ridge are fast and difficult.

Ballyneal. In 18 holes you will have 2 miles of putts to make. Off the chart hard, every hole.
